Mint Brownie Bars


I am not sure where I even came across this recipe anymore but it’s been pulled out every Christmas for years. Although they are good for any time of year there is something about mint flavouring that seems made for Christmas. Hence these mint brownie bars (affectionately called grasshopper squares in my house) are a holiday favourite. They also have made an appearance at many a pot luck around this time of year. Bake them, share them, enjoy them!

Mint Brownie Bars

Brownie Layer:

1/2 cup butter softened
1 cup brown sugar
2  eggs
1/2 teaspoon vanilla
1/2 flour
1/4 cocoa
1/4 teaspoon baking soda
1/8 teaspoon salt

Preheat the oven to 350° F or 175° C. Cream the butter and the brown sugar together in a bowl. Beat in the eggs one at a time, mixing well after each addition. Add the vanilla and mix. Add the next four ingredients and beat until moistened. Pour into a greased 9×9″ baking pan. Bake for approximately 15 minutes, do not overcook. Cool completely.




Mint Layer:

2/3 cup butter softened
2 cups icing sugar
1 1/2 tablespoons milk
1 teaspoon mint flavouring
5-6 drops green food colouring (not strictly needed but it is fun)

Beat all five ingredients together in a bowl until smooth and colour is evenly dispersed. Spread evenly over brownie layer. Chill for an hour




Chocolate Layer:

1 package semi sweet chocolate chips
3 tablespoons butter

Heat and stir chocolate chips in a small sauce pan on low until melted and smooth. Spread evenly over the mint layer. Chill overnight or until set. Cut into 16-20 small squares.

These mint brownie squares really feel like Christmas to me so from my kitchen to yours a Very Merry Christmas.
